In all the hustle and bustle of the morning routine, it’s easy to forget to take care of ourselves and make sure we start the day off with a good breakfast. So to make the most of those precious few minutes, I’m giving you some easy, healthy breakfast ideas that you can make in a pinch, or even just grab and go. Nutrition is an important part of self care, and I want to make sure you are taking good care of yourselves mamas! These recipes are all healthy, nutritious, and quick and easy to make. And, if you are one who usually skips breakfast or practices intermittent fasting, they can also make great healthy snacks!
Toast with Peanut Butter and Fruit
Looks good and tastes good! To make it, simply toast some bread, add your choice of nut butter for protein, then top with whatever fruit you have on hand. Banana, strawberries, blueberries, and raspberries all make great toppings. If you want to get fancy, try adding a drizzle of honey, shredded coconut, or cinnamon on top.
Caprese English Muffin
This one is on my list of favorite tomato and basil recipes. It also makes for a great anytime snack, not just breakfast! Start with toasted english muffins, then sprinkle shredded mozzarella cheese on top and pop in the microwave for about 15 seconds or until melted. Then top with tomato slices and basil. So fresh and delicious!
Berry Chia Overnight Oats
This recipe comes from Pinch of Yum which is one of my go-to websites for recipes. Because you make it the night before, it’s easy to grab and go in the morning (especially if you use a mason jar) and you can make more than one at a time, so you can have 2-3 ready to go for the week. Easy, healthy, yummy. Done.
Egg sandwich
I have one of these microwave egg cookers and it is a game changer for making home-made breakfast sandwiches. Just scramble an egg in the little plastic pan, microwave it for one minute, and voila! Layer it between two halves of an english muffin, add a slice of cheese, and you have a legit McMuffin-style breakfast sandwich. You can also stir in veggies, meat, and/or cheese prior to cooking for a little mini omelet patty.
Avocado Toast
Avocado + toast = breakfast awesomeness. Make it your own by adding extra toppings.
Or, skip the toast and just eat the avocado. Slice into halves, add toppings if desired (I hear the “Everything But the Bagel” seasoning blend from Trader Joe’s is delicious), grab a spoon and dig in!
Greek Yogurt with Fruit and Nuts
Greek yogurt is another healthy option that provides a good source of protein. To reduce the amount of sugar, get the fat-free version and then add honey to sweeten it. Berries, bananas, granola, and/or nuts all make for healthy yummy toppings.
Hard Boiled Egg
Easiest. Breakfast. Ever. Hard boil a batch ahead of time and they are ready to grab and go. Super quick and healthy!

I also love hard boiled eggs as a very fast on the go meal- we buy the pre-cooked and pre-shelled ones at Costco and they are great when you don’t have time to cook over the stove!

Good tip on buying the premade hard-boiled eggs at Costco; doesn’t get more convenient than that! I’m going to test out the egg cooker too and let y’all know how it goes!
